  4. Remove pears and chill. They've now taken on a nice color and flavor from the spiced red wine.
  5. You can remove the cinnamon and bay from the wine and reduce it to a syrup. With some seasoning adjustment, this can serve as a sauce, or whisk in some honey, vinegar and olive oil to make a vinaigrette.
