Take 1 cup mash paneer
Prepare 2 tablespoons semolina
Prepare 2 tablespoons ghee
Take 1/4 cup condensed milk
Get 1/2 cup milk powder
Prepare 2 tablespoons sugar
Make ready 1 teaspoon cardamom powder
Make ready as per required Few chopped cashews, almonds, pistachios
Instructions to make Gajar Halwa with Gajar-Paneer Roll:
First of wash, peel off and grate all Carrots. Mawa: - Mix well 1 cup milk + 1 cup milk powder together
Take a thick bottom cookware. Heat ghee on a low flame. Add 1 cup milk and stir. - Add grated carrots and saute well. Then add Mawa mixture and another 1 cup of milk. Mix well. Cover and cook carrots and milk for 15 to 20 mins on low heat.
When carrots are softened, add condensed milk, sugar (1/2 cup + 1/2 cup) and mix well. - Remove the lid and keep stirring the carrots over high heat. The milk becomes thick by skimming and carrots are cooked. Add cardamom powder, charoli and stir well.
If required more sweetener in Halwa then, add 1/4 cup sugar more and mix well. Stir constantly. Once the milk is completely gone and Carrots Halwa is thickens. Add cashew nuts and pistachios and mix well. After 5-7 mins turn off the gas.
Keeping the remaining Carrots Halwa as it is. I took 3 cup carrot halwa and spread on the greased butter paper kept on a plate with a spatula and freeze it for 2 hours.
In the meantime, let's prepare Sandesh:- - In bowl mix mash paneer, add semolina, milk powder to form soft dough.
In a thick pan add 2 tbsp ghee and paneer dough over low heat and mix well. Add condensed milk and mix well. Cook about 7 - 8 mins while stirring continuously otherwise paneer will burns.
Add sugar, cardamom powder and cook mixture while stirring constantly, until dry. - Turn off gas, remove mixture in a plate, divide in 2 parts, add 1 to 2 drops of green food color in one portion and mix well.
Remove from freezer the carrot halwa kept in grease plate. First spread the white mixture over carrot halwa, then green mixture over white. Press each time with a spatula. - Sprinkles cashew-almond-pistachio pieces on top evenly and press lightly by Spatula. Then slowly roll up the end of the butter paper as shown in photos.
Try making roll slowly while removing butter paper and then wrap same butter paper tightly around roll. Freeze for a hour.
After one hour remove butter paper and make a slices with a knife. Tricolor carrot-paneer roll is ready. You can keep this sweets in an airtight container in the fridge upto 1 week.
