An authentic Sichuan mapo tofu recipe. An easy mapo tofu recipe that creates the authentic taste of China. Mapo tofu ( 麻婆豆腐, ma po dou fu ) is one of the most popular classic Sichuan dishes. Mapo Tofu (麻婆豆腐) is a fiery Sichuan pork and tofu stir-fry with the hallmark málà(麻辣) balance of tongue tingling and spicy.

Steps to make Mopu Tofu:
  1. A. - Cube tofu and cook in a simmering water for few minutes. Add some salt. Gently remove from the pot and drain. Keep aside. Place minced meat in a pot with enough water covering the meat. Over medium heat, cook until meat is done. Remove and drain.
  2. Cooking the dish - Sauté B until aromatic. Add minced meat. Stir to combine for a minute. Season with C. Keep stirring, adjust taste accordingly. Cook over medium heat. Add D (thickening sauce). Stir until the sauce thickened. Start with only 1/2 C of water. Add cornstarch mixture. As for cornstarch, start with a teaspoon + 2 tbsp of water. Stir well. Check consistency. Add another half of water and another tsp of cornstarch for preferred consistency.
  3. Carefully slide tofu in and gently coat the tofu with meat sauce. Simmer over medium low heat for a minute. Drizzle some sesame oil on the dish and add finely chopped chili and sliced scallion/spring onion. Dish up.
