The ingredients needed to make Udupi sambar:
Prepare For sambar masala-
Make ready 10 Kashmiri chillies
Make ready 2 tbsp coriander seeds
Take 2 tsp Urad dhal
Take 1/2 tsp fenugreek seeds
Make ready 1 tsp cumin seeds
Make ready 6 pepper corns
Get 1 cup Scraped coconut
Take 1 lime size Jaggery
Prepare 1 Tamarind Gooseberry size (soak in warm water)
Make ready 1 cup Thoor dhal
Get 1 tsp Turmeric powder
Make ready 1 Carrot
Take 1 Manglore cucumber
Get to taste Salt
Make ready For tempering:
Take 1 tsp Mustard seed
Take little Hing
Get 15 Curry leaves
Get 4 dry red chillies
Steps to make Udupi sambar:
Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
