  2. Take 1 medium nool khol

  8. Make ready 1/2 inch tamarind

  12. Prepare 3 cups idli rice
  13. Take 1 cup raw rice
  14. Get 1 1/2 cup urad dhal
  15. Get Handful poha
  16. Make ready to taste Salt
Instructions to make Vegetable chuntey with idli:
  1. First chop all the vegetables and keep aside separate.
  2. Take oil in a pan add mustard seeds chanadhal and hing and let the dhal become light brown. Now add onions with a pinch of salt and cook till raw smell goes.
  3. Now add the carrot and nool khol with salt to taste sprinkle water close it and cook for 5 mins and stir in between so that it does not burn. Now it will be half cooked when half cooked add tamarind piece sprinkle more water close again and cook till it becomes soft switch of and add cleaned pudina leaves mix and close. It will become soft in the steam.
  4. Cool and grind to a fine paste and serve with idli.
  5. For idli batter soak the urad dhal and rice separately for 6 hours and soak poha for ten mins. Grind the dhal first with little water and a time into a fine paste. Transfer to a bowl. Now add rice with poha and grind to fine paste and mix with dhal. Add required salt mix and ferment for 8 hours. Now grease idli plates and pour the batter and steam it for ten mins. Serve with chutney.
