  1. Go to the butcher and ask for short rib “flanked”. You basically want it cut lengthwise across the bone about a finger thick. The standard in England is to preserve the bone but we be doing this Argentina’s style. Salt the meat with some good quality salt and a lot of it.
  2. Gather your chimichurri ingredients. Blitz the garlic and red onion until finely chopped

  4. Add the olive oil, red wine vinegar, lime juice, salt and chilli flakes to taste. Shake it baby.
  5. Get a bbq going. When you can hold your hand over the Coles for 10 seconds no more no less they are ready. Add the meat.
  6. When the top of the meat starts to sweat turn it over and cook for a little longer.
