In our chicken stir fry recipe below, we also stir in fresh basil and lime juice at the end of cooking. I know it might seem odd to add basil to a stir fry, but trust me, it's excellent. Instructions to make 30 minute stir fry:
  1. Spray a small wok pan with coconut or other spray oil and heat.
  2. Roughly chop the chicken thighs and add to the pan when hot. Cook for ten minutes turning when browned.
  3. Chop the pepper and mushrooms and Pak Choi.
  4. When chicken is cooked remove from pan and set aside. Add a glug of oyster sauce and soy sauce.
  5. Add pepper and mushrooms to the pan and stir fry for 5 minutes.
  6. Return the chicken to the pan with the pak Choi on top to cook down.
  7. Bring a small pan of water to simmer and add the nests of noodles. Simmer for 4 minutes or according to packet instructions.
  8. Drain noodles. Add noodles and stir fry to a plate. Enjoy.

I know it might seem odd to add basil to a stir fry, but trust me, it's excellent.
