  3. Add vegetable stock and add salt. Cover and cook on low flame for 15 mins. Add little chopped Parsley leaves, 2 Tbsp grated Parmesan cheese. Set aside
  4. Plate, add 2 Tbsp EVOO, more grated Parmesan cheese, Parsley leaves and enjoy. Enjoy the Mushroom Risotto
