Steps to make U.P. Special Samosa:
  1. To make stuffing heat a pan with oil. Add cumin seeds and allow to splutter.
  2. Add the green peas and saute till rawness is gone.
  3. Add chopped potatoes, re d chili,mix well. Mix salt and turmeric and cook covered till half done.
  4. Add pounded coriander and fennel seeds, amchur powder and ginger powder, mix well.
  5. Mix chopped coriander and mint leaves and cook till the potato masala is done. Set aside to cool down.
  6. To make dough, mix all the dry ingredients. Add water little at a time to make a dough like that of Poori.(neither so hard or soft)
  7. Cover and give rest to the dough for 15 minutes. Make balls of dough.
  8. Made normal samosa, Patti samosa and round samosa. Round samosa is my own discovery.
  9. Heat oil to deep fry. It shouldn't be more /less heated. Keep the flame in medium to low.
