Prepare 1 Lemon sized Tamarind ball soaked
Get 1 cup Pigeon Pea Lentils or Toor Daal soaked
Prepare FOR THE TEMPERING -
Take 3 tbsp Oil
Take 1 tsp Cumin Seeds
Make ready 2 Garlic cloves thinly sliced
Make ready 2-3 Dry Red Chillies
Instructions to make Kaddu Ki Khatti Daal or Bottle Gourd Khatti Daal:
Soak Daal for at least 2 hours or more. Also soak Tamarind in enough water. Set aside.
Add soaked Daal along with the water, Green Chillies, Curry Leaves, Ginger garlic paste, Salt, Turmeric powder, Red Chilli powder, Tomatoes to a Pressure cooker. Do not throw away the water in which Daal was soaked. Pressure cook for 8-10 whistles.
After done, add Bottle Gourd chunks to it. You can Pressure cook if desired. But I don't prefer that. Cover and simmer on a low heat until it's tender. It will take about 12-15 minutes. Now as a second last step, add Tamarind water that was squeezed thoroughly out of that ball of it. Also adjust Salt at this stage. Add a small bunch of chopped Coriander Leaves.
Allow it to come to a rolling boil on a medium high heat for about 8-10 minutes. Adjust consistency also without fail. It should be semi thick, neither too thick nor too thin or watery. As a final step, add the tempering to it. Mix well and it's all done. Enjoy!
