Get 250 gms Amla/Gooseberry
Take 5-7 Green chillies
Make ready 3-4 tbsp mustard oil

Get 1/4 tsp methi/fenugreek seeds
Take 1/4 tsp jeera /cumin seeds
Take 1 tsp saunf / fennel seeds
Prepare 1/4 tsp kalonji / black cumin seeds
Make ready 1/2 tsp turmeric powder
Get 1 tsp amchur/dry mango powder
Get 1 &1/2 tsp salt
Take 1 tsp kasmiri mirch powder
Get 2 pinches hing/asafoetida
Instructions to make Instant Amla Pickle:
Wash amla and green chili very well and dry it with kitchen towel.
Cut amla and chilli into small pieces.
Heat a thick kadhai or pan add mustard oil. Keep the flame on low and add hing, ajwain, jira, methi, sarso, kalonji and saunf - mix and stir all for 1 minutes then add powder masala haldi, kasmiri mirch and amchur mix all well, make sure spices should not burn. Then add chopped amla- chilli pieces and salt again mix everything.
Cover pan /Kadhai with lid and in low flame cook for 15 minutes or until amla pieces become soft. Stir 2-4 times in between.
Delicious amla Pickle is ready. - Store it for 15 - 20 days in refrigerator.
