Instructions to make Cream of Pumpkin Soup:
  1. Wash & Slice the Pumpkin accordingly…
  2. Heat up a large frying pan/wok over the medium flame: Add in the EVOO & then, the sliced onions
  3. Sauté lightly until it reduces a bit in its volume…Add in the garlic cloves as well & sauté
  4. Once done: Add into it the pumpkin slices, add in the salt & black peppers & the red chilli flakes
  5. Sauté for about 2-3 mins time, until it changes its colour slightly
  6. Then, add in the water, wait until it comes to a boil & then reduce the flame to the medium-low & allow it to cook for 15 mins time, with its cover on
  7. Allow it to cool down completely before blending into a smooth paste… Before serving warm it up a bit- if it’s very thick, can dilute it by adding about 2 tbsps of warm water
  8. Garnish with freshly cracked black peppers & fresh cream… ENJOY, this soulful healthy dish in any wintry day/night or as & when you feel like 👍🏻
