Instructions to make Baked mango cheesecake:
  1. Crush the digestive biscuit into powder. Add melted butter and mix well.
  2. Place the mix evenly in a springform cake tin. Press hard to set it properly. Keep in refrigerator for 10 minutes.
  3. Cut mangoes into cubes. Blend them to a smooth paste.
  4. Soften the cream cheese. Add hung curd, condensed milk. Mix them well.
  5. Beat the cream till soft peak. Add it to the cream cheese mix.add baking powder, baking soda and salt to it. Add 3-4 tablespoon mango purée.Mix all the ingredients by folding.
  6. Pour the mixture over the biscuit layer. Preheat the oven at 180 degree centigrade and bake it for 20-25 minutes or till it settles. Cool it and keep in the refrigerator for 1 hour.
  7. Cook rest of the mango pulp at low flame with sugar and honey till it reach a jelly like consistency. Cool it. Spread it over cheese layer. Keep in the refrigerator for overnight.
  8. Decorate it with some fresh mango cubes. Tasty baked mango cheesecake is ready to serve.
