Make ready 2 kg pork ribs
Prepare 400 g chopped tomatoes
Get 5 garlic cloves

Crush the garlic cloves and add all ingredients apart from the ribs into a pan
Blend the ingredient until smooth
Marinate the ribs and place in freezer bags or containers and refrigerate overnight
Preheat the oven to 140c and place ribs into a roasting pan. Store remaining marinate for future steps
Cover with tin foil and place in the oven for 3-3.5 hours
Occasionally check the ribs while cooking and baste with some of the marinade
Heat remaining marinade on the hob along with any juices from the ribs on a medium heat to thicken
After the 3-3.5 hours transfer the ribs to the BBQ and apply the thickened marinade and cook until done (time varies on heat). Alternatively, increase oven temperature to 200c and cook for 20-30 minutes
