  1. Take 1 tub Saint Agur blue cheese spread
  2. Take 1/2 tub fat free cottage cheese
  3. Make ready 1 small bird eye red chilli
  4. Get 1 handful frozen petite pois (peas)
  5. Prepare 10 sugarsnap peas
  6. Take 10 small blanched tender stem broccoli heads
  7. Take 1 clove smoked or ordinary garlic

  9. Get 3/4 of a lemon
  10. Make ready 200 grams green penne pasta
Steps to make Sig's Green Salad:
  1. Get your ingredients together, heat a pan of water to blanche your tenderstem broccoli heads, when water is simmering blanche the broccoli for about 5 minutes. Drain,set aside to cool. Heat another pot of water for your pasta. When water is boiling cook pasta to instructions and/or your preference. When pasta is cooked drain set aside to cool.
  2. Mix the blue chees with the cottage cheese, add the peas and the sugarsnap peas.
  3. Add the cooked blanched broccoli. Crush a clove of garlic add to mix, gently stir everything together. Add the avocado and juice of half a lemon. Add the cooled pasta, gently mix together. Adjust seasoning with salt and pepper.
