Take For Pressure Cooking Dal :
Prepare 1 cup whole black urad dal
Take As needed Water for soaking
Prepare 3 cups water, for pressure cooking

Prepare 2 tbsp butter
Make ready 1/2 cup tomato puree
Get 1 onion, finely chopped
Get 1 tsp ginger-garlic paste
Take 1 tsp coriander powder
Prepare 1/2 tsp cumin powder
Take 1 tsp kashmiri chilli powder
Prepare 1 tsp garam massala
Prepare 1 cup water or as required
Get 2 tbs malai / fresh cream
Make ready as required Few coriander leaves
Take as per taste Salt
Prepare For Tempering :
Get 2 tbsp butter
Take 3/4 tsp kashmiri red chilli powder
Instructions to make Dal Makhani:
Rinse the urad dal in a running water. Add enough water and soak overnight or at least for 8 hours.
Transfer into a cooker. Add 3 cups of water or as required. Also add some salt to taste.
Pressure cook on medium flame for 5 whistles. Or till dals are cooked completely.
In a large pan add butter let it melt then add chopped onions and saute till they change in colour.
Then add ginger- garlic paste. Saute till raw smell disappears completely.
Now add tomato puree, salt, red chilli powder and coriander leaves mix and let it simmer. Cook until all the moisture evaporates and oil starts to ooze out from the sides.
Now add cooked dal and give a good stir. Adjust the consistency by adding 1 cup of water or as required.
Now add coriander powder, cumin powder and garam massala and boil for 15 minutes or more till the dal absorbs flavour and turns thick.
Heat a tadka pan and add butter once it begins to melt add red chilli powder. Fry for 2-3 seconds. Immediately pour the tempering over dal makhani. Give a good mix to get bright colour and flavour.
Now add some fresh coriander leaves and stir it well.
Finally, garnish with malai / fresh cream and serve hot with naan.
