Get 300 gms rohu fish
Take 1 carrot cubed and boiled
Take 2 tbsp green peas boiled

Get 1 tbsp coriander chopped
Take 2 tbsp mustard oil

Get 1.5 cups maida or all-purpose flour
Prepare 1/2 tsp ajwain
Prepare 1/4 tsp salt
Take 1/4 tsp baking powder
Prepare 2 tbsp oil for mixing in maida
Get 1/2 cup water or as needed for kneading dough
Get As needed oil for frying
Steps to make Fish Samosa:
Boil cubed carrot and green peas.Strain water.In the remaining stock,add little salt,turmeric and boil the fish for 5 minutes.Dry up water in fish.Debone fish and mash well.Boneless fish cubes may also be used.Mash the carrot.
Add freshly ground breadcrumbs to mashed fish,carrot.Mix well and add ginger garlic paste,tomato puree,turmeric,red chilli powder,chopped green chillies,salt and sugar to taste.Lastly add the boiled peas and mix well to form a dough.Heat mustard oil in a pan.Add chopped onion and fry till light brown.
Add the mashed fish dough to the onion and fry well till completely dry.Add garam masala,chopped coriander and 1 tsp ghee.Also add raisins and toss well.Fish stuffing for samosa done.
For the outer crust,take maida in a bowl.Add salt,ajwain,baking powder,refined oil to it and mix well.Add water to knead flour into a tight dough.Divide dough into 5 balls.Cover and rest for 10 minutes.
Roll each ball with a rolling pin to get an oval shape. Cut from the centre.Shape into a cone matching two ends together and stuff a portion of fish filling in it.Secure the edges by smearing water.Give it the shape of a triangle.
Heat oil in a pan and fry samosas in low to medium flame till nicely brown and crispy.Serve hot with hot and sweet tomato sauce or tamarind and green chutney alongwith a cup of tea as an evening snack or appetizer at parties.
