  1. Make ready bottle gourd of medium size

Instructions to make Bottle Gourd Raita:
  1. To begin with, wash, peel and grate the bottle gourd.
  2. Heat 1 tbsp oil in a pan and add cumin seeds. When they start to sizzle, add green chilli, ginger,onion and few curry leaves. Fry till onion turns translucent.
  3. Add in grated bottle gourd and salt. Saute for a minute or two.
  4. Add little water and cook covered on a low medium flame for 3-4 minutes or till the water dries up and the bottle gourd softens. Turn off the heat and let the bottle gourd cool.
  5. Meanwhile, take curd in a bowl and whisk it until smooth. Add in sugar, grated coconut, cooked bottle gourd and mix thoroughly.
  6. For the tempering, heat remaining oil in a tempering pan and add the mustard seeds. When the seeds crackle, add dry red chillies and curry leaves. Saute on a medium flame for few seconds.
  7. Pour this tempering over the curd- bottle gourd mixture. Thus ready is the bottle gourd raita. Serve it garnished with chopped coriander leaves.
