The ingredients needed to make Udupi sambar:
  1. Prepare For sambar masala-
  2. Prepare 10 Kashmiri chillies
  3. Make ready 2 tbsp coriander seeds
  4. Prepare 2 tsp Urad dhal
  5. Get 1/2 tsp fenugreek seeds
  6. Prepare 1 tsp cumin seeds
  7. Prepare 6 pepper corns
  8. Get 1 cup Scraped coconut
  9. Get 1 lime size Jaggery
  10. Make ready 1 Tamarind Gooseberry size (soak in warm water)
  11. Take 1 cup Thoor dhal
  12. Prepare 1 tsp Turmeric powder
  13. Make ready 1 Carrot
  14. Take 1 Manglore cucumber
  15. Make ready to taste Salt
  16. Take For tempering:
  17. Take 1 tsp Mustard seed
  18. Make ready little Hing
  19. Prepare 15 Curry leaves
  20. Take 4 dry red chillies
Steps to make Udupi sambar:
  1. Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
  2. Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
  3. In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
  4. Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
