  1. Add the garlic, ginger and chicken chunks to the stock and bring to the boil.
  2. Once fully boiling, reduce the heat and partially cover. Leave to simmer for 25 minutes.
  3. Add the mushrooms, spring onions, sweetcorn, noodles, soy sauce, chillies, mint and basil. Stir thoroughly for 2 minutes and then let simmer for 5 more minutes.
  4. Serve and enjoy! Highly recommend a side of prawn crackers !
