The ingredients needed to make Chicken Rendang:
  1. Make ready 1 whole chicken (cut into pieces)
  2. Get SPICE PASTE:
  3. Take 12 shallots
  4. Get 4 garlics
  5. Take 2 cm ginger
  6. Take 2 cm galangal
  7. Make ready 2 cm turmeric (1 tsp turmeric powder)
  8. Take 2 tsp coriander seed
  9. Make ready 5 red chillies
  10. Take 1 tsp palm sugar
  11. Get 1/2 tsp pepper
  12. Take OTHER:
  13. Take 4 kaffir lime leaves (tear)
  14. Take 2 lemongrass (white part only)
  15. Make ready 1 tbsp tamarind (remove seed)
  16. Take 1 cup coconut milk (250 ml)
  17. Make ready 1 cup water
  18. Prepare Cooking oil
Steps to make Chicken Rendang:
  1. Use food processor or blender to blend all the spice paste ingredients into a fine paste.
  2. Heat oil and fry the spice paste until fragrant.
  3. Add coconut milk and water. Mix well.
  4. Add kaffir lime leaves, lemongrass and tamarind.
  5. Add chicken, adjust the heat down (simmer), keep stirring and cook the chicken until it is tender (min. 30 minutes). Ready to serve.
