Instructions to make Gluten free fairy cakes:
  1. Cream margarine and sugar.
  2. Add vanilla and eggs and stir to combine.
  3. Add flour, baking powder and xanthan gum. Mix gently until combined. Add milk and stir through to loosen the mixture to a dropping consistency.
  4. Put mixture into paper cases 3/4 full. Bake in a preheated oven at 180C for 10-12 minutes.
  5. Cool then decorate if desired. I prefer simple icing mixed with water and a glance cherry. Enjoy.
